CLEVELAND, Ohio – Two Old Brooklyn Mustard products were crowned winners at the World-Wide Mustard Competition this week. The Cleveland-based company won a gold medal in the category Best Whole Grain Mustard for its Old Brooklyn Original IPA and a silver medal in the category Mostarda for the Old Brooklyn Spicy Pear Mostarda.
“The Original IPA was created right before we even opened Old Brooklyn Cheese Company in 2016,” says Michael Januska, founder of both Old Brooklyn Mustard and Old Brooklyn Cheese. Old Brooklyn Original IPA is a whole grain yellow mustard. To make it mustard seeds are pickled and infused with C-Town Double IPA from Collision Bend Brewing Co., Cleveland. A touch of pickled jalapenos adds warmth while kaffir lime leaves add a hint of citrus.
“Mostarda is a classic condiment to go with poached meats and with cheeses,” says Januska. “We are not permitted to use mustard oil in the U.S. So, I created my version with our Original IPA and ghost chile powder in the pear syrup to bring the mustard flavor forward and give it some heat.”
The competition is sponsored by the National Mustard Museum and receives entries from makers worldwide, both large commercial operations and boutique brands. Judges blind taste numbered samples without knowing details.
